PANS LIST
1 Saucepan (4 cup size) 1 Strainer/collander FOOD LIST 1 jar of chicken or beef boullion cubes (found in the soup section) $1.50 Recommended brand: Herbox 25 cube size, no MSG (at WalMart) 1 large 12oz. bag of egg noodles, extra broad $1.33 Recommended brand: No-Yolks fat free 1 large 32 oz. bag of frozen mixed vegetables $1.50 any brand, WalMart is fine In the saucepan load cold water about 2 inches deep, bring to a boil. Add about 1 cup of frozen mixed vegetables. Boil 1 minute then drain and set aside in a dish and reuse the pan again. Put 3 cups of cold water in pan and also bring that to a boil. Unwrap 4 boullion cubes, chicken or beef whatever your choice is. Put cubes in water as it starts to heat. When water and cubes boil, lower temp to medium heat, and put one or two good sized handfulls of egg noodles in the water. Simmer for about 2 minutes and let the noodles become softer. Add the preheated mixed vegetables from your dish. Heat all together for about 3 minutes. NOTES: The total ingredients will yield about 6 different hearty meals at about 76 cents a meal. No fat and no MSG. You can freeze it or have leftovers later. Do not overcook or the vegetables will lose their vitamin content. VARIATIONS: add leftover cold chicken or roast beef chunks to the soup before serving. Or you can use frozen Stir-Fry vegetables instead of mixed vegetables, for chunks of broccoli etc. as a switch. Serve with salt-free crackers. This message has been edited. Last edited by: McClellanVet, Sue Frasier, VEV 1970 Army Signal Corps national activist/protester staff Blogger, VFJ |
